Natural Alternative to Weight Gaining Pastas

We love our pastas don't we? But we know when we nod and our other two chins second the motion, we have a problem. Welcome to the world of KELP noodles. They look like pasta, taste like pasta, can smell like pasta, but you won't start looking like pasta. They are noodles that are made from KELP. Yes, the seaweed. BUT it is a different kind of kelp, these noodles do not taste like seaweed, and are not green. Kelp noodles are made from a different kind of sea kelp, that is clear in appearance, and has very little taste, but extremely high in minerals and nutrients, unlike the kelp you would normally think of that is drak green, grainy and tastes like the sea. They have very little calories, are dense in nutrition and DO feed you, you feel full.

The great benefit of kelp noodles is they require zero preparation time, all you do is take them out of the package and soak them in cold water, then you throw them in some sauce like you do with regular pasta. What I do at home is this, I heat up some vegetables and sauce in a pot, then I add the kelp noodles and stir it in. This warms the noodles up without cooking them, because you do not want to cook them, because people prefer to eat pastas warm, not cold.

They are a hot item these days, they fly off the shelves at the Big Carrot, and are very hard to find. But you can order them online at Upaya Naturals, they carry them.

Quick and Easy Pad Thai w/ Kelp Noodles !

2 TBS coconut oil
2 eggs, lightly beaten
1/2 red pepper, cut into matchsticks
1 cup peanut sauce
1 package Sea Tangle Kelp Noodles (or spaghetti squash, or any noodle that works for you)
1 clove garlic, mashed
1/2 cup cilantro, cut (for garnish)
2 scallions, sliced (for garnish)
Unpasteurized soy sauce, to taste

Thai Fish Sauce (optional) to taste

1.)
Melt coconut oil on medium-high heat in skillet.
2.) Add red pepper, sautee for a few minutes until soft.
3.) Add eggs and stir-fry until coagulated.
4.) Add noodles and stir fry for 2 minutes until mixed.
5.) Mix in peanut sauce, cover, and let steam-cook for 5-7 minutes, or until noodles are tender. Toss with garlic just before serving.
6.) Serve in bowls, garnish with cilantro, scallions, soy sauce, and fish sauce. Enjoy!!!!
